The Skinny Pancake Opens New Café at Galleria 7 Market in Latham

The Skinny Pancake officially opened its newest location at Galleria 7 Market in Latham with a ribbon cutting ceremony, marking the brand’s continued growth in the region. General Manager Adrienne Shaw spoke about the company’s strong connection to community investment, sharing, “We love our community, we invest in our community.” She reflected on the brand’s beginnings with founders Benjy and John Adler, who launched the concept out of a converted “veggie bus,” and emphasized the company’s ongoing commitment to supporting local vendors. Shaw highlighted partnerships like a five-generation family dairy farm as an example of the values that continue to shape the business today. 

Director of Marketing Courtney O’Rourke reinforced this commitment, noting that local sourcing “is actually in our DNA” and represents meaningful “community action.” She underscored the importance of building relationships with regional producers to ensure quality, sustainability, and a strong local food network. 

As the brand’s second Capital Region location, the Latham expansion fills a niche for fresh, all-day dining while strengthening The Skinny Pancake’s presence in the local culinary scene. The new location not only broadens access to its popular menu offerings but also supports the company’s broader mission to build a healthier regional food system. 

Emceed by Jason Benitez, Vice President of Inclusion for the Capital Region Chamber the ceremony highlighted the company’s origins in 2003 and its signature blend of café-style offerings, known for contributing to vibrant “live, work, play” environments. The celebration concluded with a ceremonial ribbon cutting, welcoming a business that continues to blend sustainability, community engagement, and economic vitality into the Capital Region’s growing food landscape.
