Culinary Expert Teaches Students how to ‘get spicy’ Appropriately, the Presentation Certainly isn’t Bland

Susan Lavender of the Culinary Institute of America (CIA) talks about spices to Capital Region BOCES Career and Technical School students at the Schoharie campus on Nov. 8. She demonstrated various techniques for preparing spices for use in recipes and talked about their various effects on food with nearly 20 culinary students from Schoharie, Albany and Schenectady counties. More than 75 percent of Capital Region BOCES Career and Technical School students go on to pursue higher education, including several who have studied at the world-famous Culinary Institute of America, which is located in Hyde Park, New York.
