The Capital Region Chamber and local officials, family, friends and patrons celebrated the grand opening of Evergreen Olive Oil Co. on October 13. The modern, quaint store is nestled in the Town of Niskayuna on Van Antwerp Road. Erin Popeleski, the owner, along with her husband and three children run the business in the community in which they raised their family. The store features 66 different infused oils and vinegars as well as local homemade pasta and goods. Erin can educate you on the nutraceuticals — food as medicine — found in some of the olive oils as well as their benefit in lowering blood pressure and improving glucose levels in diabetics.
